Zucchini Bread That Rocks!
3 cups all purpose flour
1 Tbl baking powder
1 tsp baking soda
3/4 tsp salt
1 tsp ground cinnamon
1 tsp ground nutmeg
1 1/2 cups honey
1/2 cup coconut oil
3 large eggs, beaten ( I used 2 eggs and 1 egg white)
2 tsp vanilla extract
3 cups shredded zucchini
1 cup chopped pecans or walnuts ( optional )
Mix 1st 6 ingredients in a bowl. Then mix 2nd 6 ingredients in a separate bowl. Pour wet ingredients into dry and combine just until moist.
Pour into 2 greased loaf pans. Bake at 325 for 45-50 minutes.
Let cool 10 min in pans then cool completely on wire rack.

Before you go dogging on this recipe because it has white flour and eggs just hold on a darn second! First of all - all things are OK in moderation. It's not like you are going to be making this bread every day! Secondly, Mara sent me the recipe and asked me to help her get rid of the flour. It will be featured as a recipe makeover in the next several weeks.
