I love to make these when we have old bananas! My kids love them for breakfast but I love them as a treat or dessert.
**Note - I have updated this recipe to make it more calorie friendly. Previous recipe called for 1/2 cup choc chips and 2 cups whole wheat pancake mix.
Mash up a couple of bananas. Add 1 cup of whole wheat pancake mix. Add skim milk and stir until the batter is smooth and somewhat liquid-ish. Don't over stir. A few lumps are okay. Add 1/4 cup chocolate chips.
Pour batter onto medium hot skillet coated with cooking spray. I pour mini pancakes because they are easier to cook. Once edges of the pancakes solidify flip the pancakes. Cook for another minute or so. Serve hot. No syrup necessary!
Makes 10 small - medium pancakes.
Serving Size: 1 Pancake; Calories per serving: 96
Pour batter into a mini muffin pan coated with cooking spray. Cook at 375. Check with a toothpick after 12-15 minutes. Continue cooking until the toothpick comes out with no batter on it.
Makes 24 mini muffins
