This soup is absolutely delicious and there is NO cream in it! Totally healthy ingredients only and it's so easy to make!!! I use this as a side dish and sometimes even as my whole meal!
Cream of Asparagus Soup
- 1 tsp Olive Oil (40)
- 2 Bundles Asparagus, washed & halved with hard end snapped off (120)
- 2 Medium Onions (70)
- 5 Cups Veggie Stock or Chicken Broth (75)

Saute' onions in olive oil in a medium sized stock pot until soft. Add broth and asparagus to stock pot and onions. Cover and boil 20 minutes. Remove from heat. Puree until smooth.
