So delicious!  Don't save it for breakfast.  Have it for any meal!

Combine 1 whole egg, 2 egg whites, 2 Tbsp skim milk, salt & pepper to taste, and a dash of cumin.  Whisk until fluffy.  Add 1 oz crumbled pepper jack cheese.

Spray the bottom of a skillet with butter flavored cooking spray.  Place over low-medium heat.  

Pour egg combination into skillet.  Add 2-4 Tbsp pico de gallo over the top of the egg.  Cook slowly until the egg begins to take on a semi solid form.  Fold 1/2 of the egg over the top of the other half.  Cook briefly then flip.  Cook the other side until preferred doneness.  I prefer my eggs to be very well done so I cook them a little longer than necessary.

Garnish top with extra pico de gallo and parsley.
